Homemade Nilla Wafers with a Fun Twist

Had fun adjusting two completely different recipes and using both together :-)

Ingredients:


8 Tbsp. unsalted butter, softened
1/4 tsp. salt
1 cup sugar
1 vanilla bean, seeds only
1 large egg white
1 1/2 tsp. vanilla extract
1 Tbsp. milk
1 1/3 cup flour
3/4 tsp. baking powder
Directions:


With an electric mixer, cream butter, salt, sugar and vanilla seeds. Beat in egg white. Beat in extract and milk until mixed.

In a separate bowl, whisk together flour and baking powder and then add to mixture. Don't over mix.

Spoon small amounts of the cookie batter on to a baking sheet.

This recipe will make two and maybe three batches so if you use two or more sheets at a time, rotate on rack halfway through. If one sheet at a time, cover remaining batter bowl with a damp rag.

Bake at 350 degrees F. for about 15-20 minutes, until cookies are lightly browned. Cool completely before storing.
